The wine undergoes malolactic fermentation in barrels and remains there for up to 29 months. We use 100 % new French hand picked barrels from selected producers, combining different sizes, (225 to 300L). All of them share a light toast more commonly used for white wines. The reason behind this choice is to maintain as much as possible the most delicate nuances that can be found in our grapes.
The grapes for this very special wine have been selected almost on a vine per vine basis, with the aim to preserve all of the character and personality that our single estate terroir has to offer.
Deep black-blue coloured wine which is still showing its youthful grape aromas boasts a wide range of spicy and fruity nuances followed by a redolence of red roses, peppermint and spices interlaced with notes of cedar, tobacco and cocoa. The precision and elegance of its fruit along with its freshness is surprising for such a complex and rich wine. It is unctuously textured and compelling showing a perfect balance which is followed by a stunningly long finish.
