ASPARAGUS FROM TUDELA DE DUERO

Ingredients:

Tortilla cream

Asparagus from Tudela

Jamón Dehesa from Organic Farm Iberian breed 100%

Tender shoots

Olive Oil Hacienda Zorita

Tortilla cream ingredients:

2 Potatoes

1 onion

Milk, salt, pepper C. S.

When poached potato and onion are crushed with milk, salt and pepper leaving the desired thickness

Asparagus:

Peel the asparagus leaving the yolk slice unpeeled.

Cut them in half and cook in salted water and sugar.

Buds - 2 min

The bottom - 4 min

Vinaigrette:

1 Vinegar

2 Oil

Egg foam

Deep frying of Hacienda Zorita 3 eggs.

The grind with cream, season, by Chinese and a siphon is passed with a load

Mounting:

Sauté asparagus with snow peas, cut into strips.

We put a border of cream tortilla, place asparagus vertically different heights.

On it a snap peas, micro sprouts and a slice of ham Dehesa de Organic Farm. Add the egg foam.
