PRODUCTION METHOD

Made with grapes from vines grown organically. Throughout its process, it has followed the regulations of the "Catalan Council  of  Ecological  Agricultural  Production"  (CCPAE).   The biological and organic production is a system whose objective is to obtain food of the highest quality respecting the environment and without using chemical synthesis products

We make a manual selection of the grapes at the moment they arrive to the cellar. Once in the cellar, only the untreated must is used, in order to avoid all the astringent imperfections and the green notes that come with pressing.

Fermentation takes place in stainless steel tanks at a very low temperature (13º - 14º).

The second fermentation in the bottle is left at least 12 months in the cellar at a constant temperature of 14º-15º.

TASTING NOTES

Pale yellow, with green tones, fine and persistent bubble. The nose is fresh, with notes of green fruit (apple). Balanced mouth, creamy and elegant aftertaste.

FOOD MATCH AND TEMPERATURE

Perfect with all the fish dishes and white meats in light sauces. Delicious with appetizers and barbecues.

 

Recommended serving temperature: 6 ° C.
