PRODUCTION METHOD:
Mostly clayey-calcareous. Plots of Rioja Alta with ferrous sub-soil
Vinification process: The must is fermented at a maximum temperature of 28°C. After fermentation, the wine is transferred into oak casks to slowly mature for 12 months, followed by a further 12 months ageing in bottle prior to itsrelease.
TASTING NOTE:
Medium to deep shiny cherry color. On the nose it has red fruit aromas and hints of vanilla and spice. On the palate, it is well structured and round with a good integration of the fruitiness and oakness. It is smooth, spicy and toasty with a pleasant long finish.
FOOD MATCH & TEMPERATURE:
Pairs well with grilled salmon, roasted chicken with seasonal vegetables, or a hearty beef stew. Fingerling potatoes or dark chocolate fondue with strawberries, biscotti, and pound cake.
Recommended serving temperature: 17°C Ca Rioja.
